What I like about this dessert.
I consider it one of my favorite cakes.
You can find it in all the 'bakeries' in Paris plain or with fruit.
It is simple and economical, the basic recipe contained only: eggs, sugar, flour and milk.

  • 1 vanilla pod
  • 3 eggs
  • 150 g of sugar
  • 90 g cornstarch (corn starch)
  • 25 cl of coconut milk (or 15 cl of liquid cream)

RECIPE PREPARATION Parisian dessert flan (pudding):

Preheat the oven to 180 ° C.

Cut the vanilla pod lengthwise and grate the core with a knife.

In a double-bottomed pot and pancake with cold water, boil the milk with the vanilla bean and the recovered core.

Bring to a boil.

Meanwhile, beat the eggs well with the sugar, add the cornstarch diluted in coconut milk.

Mix well and pour hot milk on top, stirring constantly.

200g flour

500 gr. fresh pumpkin core, diced
3 eggs
7 tablespoons brown sugar

25 gr. butter (for greased cake form)

Preparation time: 40 minutes + 40 minutes baking time

The pumpkin core should be boiled in water, enough to cover it, and a little salt. Boil it for 15 minutes until soft. We drain it and crush it with a fork until it becomes puree. Let's put it aside.

In a bowl, beat the eggs, sugar, spices and milk or cream. Add the pumpkin puree and mix with a spatula. A very liquid composition will come out.

Grease the cake tin with butter and place baking paper on its bottom. Pour the composition into the mold and bake for 40 minutes at 180 degrees or until we do the toothpick test. If it comes out dry when we put it in the middle, it's ready! Allow the pudding to cool to room temperature. Serve hot or cold, with a glass of milk, or sour cream or whipped cream. Yummy!
