Caramelized apples:

Wash the apples, peel them and cut them into suitable cubes.

Transfer them to a saucepan, add sugar, cinnamon and butter.

Put the pan on the fire, mix well until the sugar is melted, then let them simmer for 5 minutes on low heat.

When they are ready, remove the pan from the heat, let the apples cool.


Countertop:

Mix the yolks with the sugar, then with the oil.

Add the milk, then the baking powder, vanilla and flour.

Mix the mascarpone with powdered sugar, vanilla and grated lemon peel.

Separately, mix cold liquid cream, but not at all.

Incorporate it over the mascarpone and mix a little more.


We put a detachable ring around the cake on the plate.

We put about half of the cream, level it.

Pass the biscuits through the compote juice, place them in the pan, then put the rest of the cream and level it.

Put the cake in the fridge for 2-3 hours.

After this time, take it out of the fridge, remove the detachable ring.

Powder it with cocoa, then decorate it with pieces of apples, walnut kernels, grapes, mint leaves and whatever else you like.

6 eggs
6 tablespoons flour
5 tablespoons sugar
an envelope of baking powder
a teaspoon of vanilla essence
a drop of salt
four apples of the right size
100 grams of sugar
half a teaspoon of cinnamon

100 grams of white chocolate
200 grams of mascarpone
200 grams of whipped cream
a teaspoon of vanilla powdered sugar
a teaspoon of cold water

100 ml water
a spoon of sugar
a knife tip of ground cinnamon
a teaspoon of lemon juice

baking paper
a piece of butter as big as a walnut
a tablespoon of flour

  • Preparation for the cake recipe with caramelized apples, mascarpone and chocolate
  1. We start by preparing caramelized apples. Peel them and cut them into cubes of the right size, add the sugar and cinnamon over them and put them in a saucepan and place them on the stove over medium heat. Leave the pan on the fire until you notice that the sugar has melted and the apples have caramelized. Stir occasionally. I recommend using stronger apples so that they remain whole after caramelizing them.
  2. After we have finished caramelizing the apples, let them cool and start making the pandispan, not before turning the oven to 180 degrees and preparing two round trays, with a diameter of 18 cm and a detachable bottom. To obtain countertops with the most uniform side edges, we will use baking paper only on the bottom and we will grease the sides with butter and wallpaper with a little flour.
  3. Separate the egg whites from the yolks and put them in two bowls.
  4. Mix the yolks with the sugar and rub until it melts and you get a light cream.
  5. Add over this vanilla cream and sifted flour together with the baking powder and mix well.
  6. In the other bowl, beat the egg whites well until they become firm.
  7. Incorporate the egg whites into the egg dough, sugar and flour, making light, circular movements, from bottom to top, to keep the egg white aerated.
  8. Divide the amount of apples in half and place them on the bottom of the trays prepared in advance as explained above.
  9. Put the dough in half and pour it over the apples and then put the trays in the oven for 30-35 minutes, depending on how everyone bakes the oven. We do the test with the toothpick and if they are ready, we take the trays out of the oven and leave them to cool a little, then we take them out a little from the tray and we move them on a grill to keep them cool. Ideally, we should bake the countertops the day before the countertops have time to cool well.
  10. After the tops are cooled we can move on to the cream and assembling the cake.
  11. We make mascarpone cream, chocolate and whipped cream starting by melting white chocolate on a steam bath, together with a teaspoon of cold water. When the chocolate is melted, set it aside and leave it to cool.
  12. Meanwhile, rub the mascarpone cheese well and make the cream and sugar as whipped cream as shown here.
  13. When the chocolate has reached room temperature (so it doesn't cool down at all), gradually incorporate it into the mascarpone and mix, then add the whipped cream.
  14. Take a tablespoon of whipped cream and add it to the chocolate cream and mascarpone, mix and then put the whole composition over the whipped cream. Stir and let cool for at least a quarter of an hour, during which time we prepare the syrup and cut the tops.
  15. For the syrup. Put the sugar and water in a saucepan and let it boil over medium heat until the sugar melts and a syrup forms. Remove from the heat, add the lemon juice and let it cool.
  16. Assembling this simple but tasty cake with caramelized apples, macaroni and chocolate is very simple. Put one of the tops on a plate, with the side where the apples are, up, syrup with half the syrup and then spread a generous layer of cream.
    Separately, we syrup the second countertop and then we put it over the first countertop with cream. Also, be with the side that has the apples up. Cover the entire surface with cream and decorate according to your preferences. I used caramelized apple slices and ground cinnamon.
  17. Let it cool for at least a few hours and then we can serve it and enjoy it. Do not try to do as I do, that is to hurry to cut it because the cream will still be soft and will not cut too well, meaning it will not look so beautiful. But, with us, having a small appetite in the family, the cake did not withstand the cold for more than an hour, insufficient time for the cream to harden. The next day, however, it was cut much better)

I prepare this cake whenever I want to make something sweet but I don't have time for something complicated, with creams, sheets or countertop combinations and I don't have too many ingredients at hand. It can be adapted to any other fruit that has a stronger consistency (pears, quinces or even exotic fruits: mango, papaya).

You need:
5 eggs
5 tablespoons sugar
5 tablespoons flour
2 sachets of vanilla sugar
3 tablespoons yogurt
1 sachet of baking powder
1 pinch of salt
1 teaspoon vanilla essence
1 tablespoon grated lemon or orange peel
4-5 apples


Beat the egg whites with a pinch of salt and then gradually add the sugar. Mix well until the sugar melts, add the yolks, yogurt, vanilla essence and grated lemon peel and mix.
Peel an apple and cut it into cubes. Sprinkle with a little lemon juice so as not to change color.
The flour is mixed with baking powder and incorporated into this composition with a wooden spoon or a spatula.
At the end, the apple pieces are incorporated.
Pour the composition into a tray lined with baking paper and bake for 40 minutes.
Serve powdered with sugar.
