Salted with Cheese, Cumin and Susan

We all know the little things our grandmothers or grandmothers used to do as children. Ingredients for salts:

  • 250 g butter or cube frame
  • 750 g flour
  • 2 egg yolks
  • 250 g finely grated grated cheese
  • 1 tablespoon salt
  • 1 teaspoon baking soda
  • 300 ml sour cream
  • an egg or an egg yolk for spreading
  • cumin, oilseeds (sesame, poppy seeds, sunflower seeds) or grated cheese for sprinkling

How to make saltines:

Sift the flour in a bowl or on a worktop and mix it by hand with the chopped butter, until you get a crumbly dough. From the heat of the hands, the butter will mix quickly with the flour, it goes faster than with a mixer. Add the baking soda, salt and grated cheese, then the whipped cream with the yolks. Form a ball and let the dough rest for a quarter of an hour. But I think it might freeze in more crowded times, but I haven't tried that yet. If I ever try, I'll tell you how it turned out. (UPDATE: I also tried frozen dough. It works perfectly, only it needs to be completely thawed - & gt move the dough out of the freezer to the fridge the night before, and take it out an hour or two before processing & # 8211 depending on temperature & # 8211 at room temperature!)

Spread the dough to a thickness of 1 cm and cut it into strips of approx. 10 cm. We prepare two large trays with baking paper (they came out with 3 trays, because I stretched the dough a little thinner). Baking paper can be omitted, because the dough is very greasy and will not stick to the tray, only that the tray will be easier to wash. Preheat the oven to 180 ° C.

After cutting it, grease the dough with an egg or a lightly beaten egg yolk, and sprinkle it richly with cumin, fried seeds or grated cheese (then they are lost from them). Place the saltines in the trays at a suitable distance, because they will grow while they are baking and put them in the oven for about 12-15 minutes, depending on the oven. I'm ready when they turn golden, slightly brown.
