I met Maria Gorban years ago at the ProEtnica festival in Sighișoara. He represented the community of Ukrainians from Ulma commune and I wanted to taste the dishes specific to his community… Ukrainian dishes according to Romanian recipes. That is, grounded in our country and assimilated by the whole village, by the whole commune.

That is probably why many of the village's dishes have two names: one Romanian and one Slavic. As is the case with these “dumplings”, also called “vereneche” or “vareniki”… But I am less interested in how they were told at their baptism and more in how they prepare, according to a unique recipe, and in the houses of Romanians and those of Ukrainians, from Ulma.

You need 500 g of flour, two eggs, 250 g of cream, 500 g of cottage cheese, salt, sugar. Make a flour dough, an egg, warm water and salt. Knead well and spread out a thin sheet. Cut into 8 cm squares. Mix the cottage cheese well with an egg and salt. Fill the squares. They stick to the edge. Boil in boiling water until it rises above the water. Remove, rinse with cold water and top with cream and sugar to taste. Cream can be replaced with yogurt.

They can also be filled with sauerkraut, but in this case they are greased with melted butter.

The dumplings can be served and fried. After the squares have been filled with cheese, fry in oil or hot butter, on one side and on the other, until the dumplings are browned.

What can be simpler than potato dumplings is a dish that is prepared quickly and is eaten on "hate". ingredient:

ingredient:
For the test:
3 tablespoons. flour,
1 tbsp. of water,

For filling:
1 kg of potatoes,
1-2 onions,
3-4 tablespoons vegetable oil.

Method of preparation:
Boil the potatoes until boiling in boiling salted water. Then drain the water, gently dry the tubers to evaporate the moisture and put them in a pill. Cut the onion into small cubes and fry in vegetable oil until golden. Then add it to the mashed potatoes and stir. Allow the potatoes to cool on the table and, in the meantime, prepare the dough for the dumplings. Pour the bowl 2.5 cups of flour flour, deepen pour egg water loosen in it, salt oil and vegetables and knead the dough does not cling to hands. Cover the dough with a napkin and leave it on the table for 30 minutes, then knead again, adding the remaining flour. The dough should be smooth and elastic. Divide the dough into 2-3 parts and turn each into a 3 mm thick layer. Cut the circles with a diameter of 5-7 cm. Place the filling in the middle of each circle and protect the edges. Cook the dumplings in boiling salted water. Lower 10-12 pieces and cook, stirring, for 5 minutes from boiling point.

In this recipe, you can really make your own adjustments. For example, in a frying pan fry the onion is not only like melenko slices of lard, then add this mixture to delicious potatoes. Get a more flavorful and satisfying dish, which can be served at the table with both cream and mayonnaise (which is rather similar).

ingredient:
For the test:
4 tablespoons. flour of the highest quality,

2 eggs,
½ h. L. Salt,
sour cream,

5 large potatoes,
300 g mushrooms,
1 onion,
1 tbsp. butter,
salt, black pepper - for taste.

Method of preparation:
Set the flour in a large bowl. Make a small funnel in the flour, pour the mixed eggs into the salted water. Knead the dough soft, elastic. Place the finished dough in a plastic bag and refrigerate for 30 minutes. To make the filling, peel and boil the potatoes in salted water until cooked. While the potatoes are cooked, finely chop and fry the mushrooms and onions separately. Hot, freshly prepared mashed potatoes and add the fried mushrooms and golden onions and mix well to cool the filling. After 30-40 minutes, remove the dough from the refrigerator, roll in the form of sausages and cut into 2 cm thick pieces. Each such piece of cake from the roll, the center that puts 1 tbsp. l. fill and protect the edges. Cook vareniki 5-7 minutes after entering the surface.
Ready vareniki can be served at a table with cream, decorated with fresh herbs, as in this recipe, or you can - with butter or fried onions.

And vareniki can be frozen and cooked as needed, which is very convenient for all of us, suffering from a chronic lack of time. Put the hot potatoes, adding a decoction, if necessary, so that the grass does not become too thick. Add the pickled cucumbers in small cubes on the potato table, stir - and the filling is ready. Now move on to pouring vareniki. Pull the dough, cut the circles with a glass. Put the filling in each of them and firmly fix the edges. If you have a special form for modeling vareniki, use it. Vareniki in this case are the same size and with beautiful edges. Place the dumplings on a table or on a table, sprinkled with flour. dumplings right on the board, you can send it in the freezer until completely frozen (so they will not stick together), and then spread on the packages. We suggest you make a dish of cottage cheese. Such vareniki on kefir are prepared very quickly and you will definitely like the baby. This recipe is easy to remember, but it is even easier to put into practice. Ingredient: Dough:

  • sewn flour - five glasses
  • a large spoonful of soda
  • a spoon of sugar
  • egg - one piece
  • two tips of ordinary salt
  • 0.5 liters of kefir

  • fresh cheese - 350 grams
  • raisins - optional
  • three tablespoons of sugar

Preparation method: In a separate bowl, whisk the sugar and a chicken egg. After a deep bowl pour the flour, a pinch of salt and a tablespoon of baking soda, mix everything well, make a hole in it and pour the mixture of yogurt and warm sugar eggs. After kneading your hands with elastic dough. When you're done, cover it with a clean towel and leave it for a while (half an hour will be enough). The recipe for this filling can be slightly improved, for example, by replacing the curd with a cake paste already sold in many stores. Some sources recommend the use as egg yolks, but in our time, when you can not be completely sure of the quality of products, it is better to refrain from it, to avoid contamination with salmonella. But if you are raising a bird and you have house eggs, then why not? Ready to put the dough on the kitchen table, before it is sprinkled with flour and roll it in a thin pancake. After taking a cup or bottle and cutting the cups, place half a tablespoon of the filling in the middle of each and secure it around the edges. Cut the dough into pieces, crush them with your hands and turn them again with a bolt. Be an economic mistress! Boil dumplings in boiling water, slightly salting or cook them for a couple. If you have too many items, send them to the freezer. Before serving, pour a bowl of homemade cream or put a piece of butter. The butter sauce is perfect for these dumplings, it is fine, fragrant and very delicious. I hope you like this recipe and prepare it with pleasure. Ingredient:

  • 430 gr. - White flour
  • 100 ml. - plain water
  • 2 tablespoons - oil
  • 2 eggs
  • ½ teaspoon - salt

For the filling:

  • 600 gr. - Fresh cherries
  • 4 tablespoons sugar
  • 1 tablespoon - cornstarch or flour

For the sauce:

  • 70 gr. - butter
  • 3-4 tablespoons - sugar

Method of preparation:

  1. First of all, remove the seeds from the already washed cherries. Put the cherries in a sieve to drain the excess juice while you take care of the dough.
  2. Put the flour in a bowl, add on top: salt, eggs, plain water, oil and with a fork start mixing. When the dough starts to homogenize, leave the fork aside and turn the dough on the table, then knead it for about 8-10 minutes. At the end, form 2 balls and wrap them in cling film, let the dough rest on the table for about 10 minutes.
  3. Lay the first ball in a round sheet of about 3 mm. thickness.
  4. Using a knife cut squares of dough 5-6 cm.
  5. Put very little starch or flour in the middle of a square, this will help to thicken the cherry juice. Then add a few cherries, and put 1/6 teaspoon of sugar on top.
  6. Stick two opposite corners with your fingers so that you get a triangle. It also presses along the edges to stick them well, which will help the dumplings not open during cooking.
  7. As you shape the dumplings, put a large bowl of boiling water.
  8. When the water starts to boil, put in it about 1/3 of the amount of dumplings made. You do not have to put them all at once so as not to overheat them, it is better to cook them in 2-3 rounds. Mix them carefully with a spoon so that they do not stick to each other. Let them boil for about 3-4 minutes or until all the dumplings have risen to the surface.
  9. Meanwhile, put the butter and sugar in a large bowl, when the dumplings have boiled, remove them from the water with a sieve and put them in the bowl over the butter and sugar. The heat of the dumplings will melt the ingredients and you will receive a delicious sauce. Shake the bowl until all the dumplings are covered with sauce and serve immediately. Good appetite!
