The 2 kg of quince are weighed after being cleaned of the inside and damaged parts.

I put water and sugar on the fire in a bowl.

I let it boil until the resulting syrup became thicker.

I passed the cleaned quinces through the robot, but I didn't crush them too much. I didn't have the patience to cut them into cubes as would have been ideal. over them I squeezed the juice from a lemon and a half.

I put the quinces over the syrup and let it simmer for about 1 hour and 30 minutes, stirring the candles so that they don't stick.

I prepared the jars, washed sterilized and put hot jam in them. I put a quarter slice of lemon on top. I put the lids on and put them in the oven for 5 minutes on low heat, then I left them in the oven until they cooled.

How good it will be throughout the winter !!
