Cut the ribs into suitable pieces and then boil them in a mixture of beer and water. Add a few bay leaves and a few peppercorns and leave for about 30 minutes. to boil at the right heat.
Separately make a sauce from ketchup, soy sauce, ginger, salt and ground pepper. After the ribs have boiled, remove them from the mixture of beer and water, put them in a bowl and pour the sauce above. 2 hours after which we place them in a tray, pour the sauce over them and put them in the oven for 20-30 minutes.
I served it with couscous garnish and cucumber salad.
